As an athlete and nutritionist, I believe food is our nourishment and fuel, but I also believe it contains the power of community building, friendship and creativity. I have put together a few of my favorite nourishing recipes to help inspire you to gather and come together this fall.

Loaded Harvest Salad:
Dressing:

¼ cup Apple Cider
-
½ cup olive oil
-
1 T. minced garlic
-
1-2 T. honey
-
Pinch of Salt
Salad:

2 cups kale
-
2-3 cups mixed greens
-
3 T. goat cheese
-
2 T. pumpkin seeds
-
¼ cup raisins or dried cranberries
-
Sliced Avocado
-
Combine all ingredients in the dressing in a mason jar and close tightly. Shake until ingredients are combined.

In Large bowl mix together greens & kale. Top with other ingredients and then pour the desired amount of dressing over the top. Mix thoroughly & enjoy!
Baked Cinnamon Squash:

1 Acorn Squash
-
1 Butternut Squash
-
1 tsp cinnamon
-
½ tsp sea salt (or to taste)

Sliced both squash into small squares and placed on a pan. Sprinkle it with olive oil, cinnamon and sea salt.

Bake at 425 until a fork pokes through no problem.

Add more salt or cinnamon as needed.

Serve on a HydroFlask Platter.
Apple Chicken Marinade:
Marinade:

¼ cup apple cider vinegar
-
3 T. olive oil
-
1 T. lemon
-
1 tsp dijon mustard
-
½ tsp sea salt
-
½ tsp black pepper
-
3-4 large chicken breasts
Pour over chicken and marinate for 2-4 hours in the fridge. Grill for ultimate flavor!
